Menbaka Fire Ramen was originally founded in Kyoto in 1984 by Master Masamichi Miyazawa, who spent his childhood learning the intricacies of making ramen in kitchens across Japan.
Master Masa-san decided to create a different type of ramen and introduced Menbaka's signature dish, the "Fire Ramen," which is the world's first of its kind.
Highlights:
- Delicious bowls of fire ramen: Diners can observe as the chefs set the oil ablaze, creating a striking and towering flame, before pouring it onto their distinctive broth, which is garnished with green onions. This dish is made with a 220-year-old blend of Shoyu, which is imported from Japan to provide an authentic flavor to the dish.
- Noodles with unique texture: The restaurant’s custom-made ramen noodles have a unique texture and style, with a neutral taste and a straight cut that is a little firm to the bite. These noodles absorb all the flavors of the soup perfectly, making them the ideal match for the dish.
SOUP BASE: The Shoyu Fire Ramen is served with a chicken-based broth that is stewed with two types of dried fish shavings – sababushi and katsuobushi – to create a rich umami broth.
