SOUP BASES: There are four flavours of soup bases for you to match with your favorite noodles and toppings: shio (salt), shoyu (soya), miso (bean paste) and kara-miso (hot bean paste). Among them, shio is the one that has won fame for Santouka. This tonkotsu based soup is made from black pig bones with addition of seafood so it has a milky look, a slightly thick texture and a sweet-and-salty taste.

ATMOSPHERE: Santouka at The Central Mall is a small-size restaurant with minimalist decoration. The seating area is quite cramped, but diners will be taken beyond where they are through a panoramic view overlooking splendid Clarke Quay through ceiling-floor glass windows. The light wooden hue of the interior makes it a cozy place for the best ramen.

- Be prepared to queue during peak meal hours
- The onsen egg is not included, each one costs S$1.50.
- There are only around 25 seats at Santouka at The Central Mall, so you can choose to have meal at their second outlet at Cuppage Terrace to avoid queuing.
